Eating from the Garden

Our first harvest from the Gratitude Garden was accomplished on July 2. The kids created a salad consisting of lettuce; radishes; kale; nasturtium (an edible flower); basil; oregano; marigold; leeks and purslane.

 

 

 

 

 

 

 

 

 

 

 

 

  

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Purslane is an interesting and a bit unusal salad choice. Purslane (portulaca oleracea), also known as verdolaga and pigweed, is a common garden weed. It grows low to the ground with waxy-appearing green leaves and yellow flowers. But purslane is widely eaten in Mexico, Europe and Asia, where it is considered a salad delicacy. Purslane contains more Omega-3 fatty acids than any other leafy vegetable plant.
